The Profiler Blend – Fresh Crop Update (July)

We’re excited to welcome back our El Salvador component to The Profiler with the arrival of fresh crop Finca El Paraíso, a standout washed Bourbon lot sourced through the Aida Batlle Selection Program.

This coffee is produced by Claudia Mathies, a fourth-generation grower whose family has owned El Paraíso since the 1800s. With support from Aida Batlle, Claudia has brought this Café Practices–certified farm into the spotlight, not only for the quality of its coffee but also for its commitment to community — including regular on-site medical visits and seasonal celebrations for local families.

In the cup, El Paraíso brings rich chocolate and toffee, balanced with sweet date and a delicate orange-like acidity — the perfect complement to the creamy, chocolate-driven base of Fazenda Lagoa.

Sourced through SMC Specialty Coffee, this latest release returns The Profiler to its classic form — smooth, sweet, and built for milk, with the complexity to shine on its own with our Deli Blend.

In the heart of Minas Gerais, with its lakes and rich farmland lies the well-known coffee growing region of South de Minas. Marcelo and Adolfo are cousins and their family has always been working with coffee culture, bonding them as associates as well. Fazenda Lagoa's first coffee plantation was established over 100 years ago. Marcelo is renowed by his contribution to the specialty coffee's promotion in Brazil alongside with BSCA and Adolfo is considered to be a pioneer when comes to high quality and sustainable production. He's been the responsible for the farm's management and all the coffee grown at Lagoa is prepared at Fazenda Passeio - Lagoa's neighboring farm.

PRODUCTION AND SUSTAINABILITY

Lagoa is located in an area that is favorable for coffee production, with a mild climate during part of the year and mountainous relief. The harvest is 100% manual, aiming the quality of the cherries and also due to the sloping relief - a big machine would not be able to work in there. The workers come from the cities around to work during the harvest and post-harvest season, the same ones that mind Fazenda Passeio's crop, and part of the team live in the farms' houses.

Lagoa's coffee is produced at altitudes ranging from 900 to 1.100 meters and presents around 600 hectares of preserved forest, attracting nature conservationists from all over the world to study its hundreds of different bird species and native trees. The amount of bees that can be spotted during the flowering is also a sign that the environment is well-balanced.

Fazenda Lagoa has also been committed to the social aspects - making donations to local educational and cultural projects and with the Social Center they make available to the community. The place counts on a course class, a study room, a kitchen and a wide gathering space for events and leisure time.

Every year, at the beginning of the harvest season, they come together to work on hand-picked micro lots, following their processes from beginning to end. An initiative that aims at gender equity in this area of coffee farming.
