Edwin Manchay Cruz owns the 2-hectare farm Finca El Limón in the Cajamarca region of Peru. The farm is located in Jaén, a city that has positioned the Cajamarca region as an elite coffee-producing hub at the national level.
At Finca El Limón, their goal is to combine environmental sustainability, meticulous agronomic management, and rigorous processing control to deliver consistently high-quality coffees. They consider their incorporation into the Alto Amazónico Association as one of the farm's most significant milestones.
The farm is home to around 5,000 Caturra and Gesha coffee trees alongside other crops such as yuca, plantains, and corn.
Their coffee undergoes the Washed process with a 70-hour fermentation period in cherry.
Looking to the future, they are committed to continuing to innovate their processes, expand traceability, and enhance coffee experiences, aiming to offer our consumers distinct, variety-specific lots that forge a direct connection between the consumer and the coffee's origin.
